Replacing sugar with honey:
For 1 cup of sugar you will need 80 percent the volume, or about 3/4 cup of honey, but you will also need to remove 3 tablespoons of water from the recipe. By weight, you will need to multiply the sugar by 128 percent to get the weight of the honey and then multiply the weight of the honey by 17.2 percent to determine how much liquid to remove from the recipe.
Replacing honey with sugar:
For 1 cup of honey you will need 125 percent the volume or about 1 1/4 cups of sugar plus 1/4 cup of water. By weight, you will need to multiply the honey by 78 percent to get the weight of the sugar and also multiply the weight of the honey by 17.2 percent to determine how much water to add to the recipe.
